Parmigiano-Reggiano is a protected Italian cheese that has been made the same way for hundreds of years. The name Parmigiano Reggiano is different from Parmesan. Parmigiano Reggiano must be made in Italy, must be made of unpasteurized cow milk, and must be aged at least 18 months. The resulting cheese is often called "The Kingo of Cheese" for it's dense, dry, flaky texture and radical, complex flavor that is sweet, salty, spicy and mouthwatering all at one time. This Parmigiano Reggiano can be grated for topping pasta, salads or vegetables. Parmigiano Reggiano is made with animal (not vegetarian) rennet and is gluten-free.

PERFECT SIZE OF GRATABLE PARMESAN
By law, it's either Parmesan from Parmesan, Italy, or it's not. This Parmesan fits the bill for being legit, tasty, with just that bit of attractive salt added to bring out its flavor. Grated over our spaghetti or white clam sauce, this is perfect. I keep it stored after opening, still covered as much as I can, in its original wrapping. And then I store that in a "green bag," (available on Amazon from Debbie Meyer) and it keeps for weeks and weeks, perfectly. Good stuff and legit Parmesan. Don't settle for the grate-able hard cheeses which can only claim to being "like" Parmesan. They aren't.

Low quality Parmesan
Tastes like domestic Parmesan. We eat a ton of Parmesan at our house and I only buy the real deal. This definitely isn’t it unfortunately, and if it is actually from Italy it’s probably the lowest quality. Not sure how the reviewers can say it tastes authentic. Better off just going to the grocery store than wasting money on this.

Outstanding. You get what you pay for
If you want something of VERY high quality, this is my #1 choice. It has the most gorgeous flavor, and makes ALL the difference in my lasagnas, etc., Yes, it's more costly, but a little goes a long way, and as the adage goes, you get what you pay for.

My favorite Parmigiano reggiano
Excellent. A bit pricey, but its D.O.P. Parmigiano reggiano, so the price is to be expected. This being real Parmigiano and not the sawdust in those green containers, has a pronounced, sharp, salty, nutty, flavor and a little goes a long way. If you haven't had real Parmigiano before, I suggest slicing off a tiny sliver and tasting it first to see the difference from the green containers "stuff."

Excellent flavor
Can't go wrong with an authentic Parmigiano Reggiano. Excellent flavor. My current favorite hard cheese. I wish I could afford an entire wheel.

Good to have in the fridge in case we are out of the deli quality
Good if using for a recipe but not as good quality as you will get if you go to a cheese counter and buy a fresh chunk.
